I am constantly listening and learning from both loyal guests and our dedicated crew members. This hands-on knowledge makes me more effective in the decisions I make as they relate to improve- ments and enhancements of the product. Over the months and years ahead you will notice both subtle and significant enhancements. It’s no secret that a key to success is to surround yourself with win- ners --- people who love what they’re doing and are good at what they do. The crew aboard S EA D REAM I & II are excellent and their sense of achievement rubs off on me. These individuals, along with those in S EA D REAM ’s Oslo and Miami offices, keep me motivated, confident and passionate. Come this September, S EA D REAM YACHT CLUB will celebrate our 9th anniversary. I believe the S EA D REAM product being delivered today remains unmatched. Yet I do ask “how can we be better to- day than yesterday?” I need to be dissatisfied in a positive way to pursue excellence. Find new ways to do what we do better. Try new things, find new areas of challenge. I look forward to seeing you aboard soon. As a Norwegian, I must suggest you join S EA D REAM I in 2011 as she sails her maiden voy- age to Northern Europe, Scandinavia and the Baltic. A Sultry way to Celebrate the Season

Visiting the Caribbean in November and December with S EA D REAM is ideal. The weather is warm in the Caribbean, even as it cools off in much of the United States and Europe. If you’ve never heard of the term “flairtender” join the club. If you never knew of a skill called “flair bartending”, you don’t know what you’ve been missing. Great entertainment – that’s what! Born in Johannesburg, South Africa and now calling Durban home, one of Alex’s “hobbies” is flair bartending. I suppose the name itself explains what it is. Flair bartending is the practice of bartenders entertaining guests with the manipulation of bar tools (e.g. cocktail shakers) and liquor bottles in tricky, dazzling ways. The action requires skills commonly associated with jugglers. There are competitions for this skill (sometimes called “extreme bartending”), even a Flair Bartenders’ Association. Alex even went so far as competing in the World Flairtending Cocktail Competition in Greece. He is currently ranked 5th in South Africa for flair bartending. Alex’s showmanship enhances the overall guest experience aboard S EA D REAM . He is friendly and enthusiastic and enjoys exercise and keeping active (all of which must be a prerequisite to be a successful flairtender). Alex is waiting for your order. Cheers.

Visit Peterhof Palace by Hydrofoil During communist times the State lavished enormous sums on restora- tion of this palace which was a favorite of Catherine the Great. Peterhof is nestled on the shore of the Gulf of Finland. S EA D REAM guests will take a hydrofoil down the river and out to the palace on the southern shore. The palace was conceived by Peter the Great and built between 1714 and 1725. Later, it was extended to its present size and redesigned by architect Francesco Bartholomeo Rastrelli. The palace sits amidst an enormous park adorned with fountains, statues and pavilions. Catherine’s Palace and Parks in Pushkin Catherine’s Palace in Pushkin was Catherine the Great’s favorite summer resi- dence. Peter the Great built the first wooden palace on this territory for his wife, Catherine I. His daughter Elizabeth later converted the modest wooden palace into a magnificent stone palace reminiscent of fairy-tale chambers.

It possesses tremendous artis- tic value and it is amongst such treasure-houses of art as the Louvre, the National Gallery, the Metropolitan and el Museo del Prado. Today, strong points of the Hermitage collection of Western art include Michelangelo, Leonardo da Vinci, Rubens, van Dyck, Rembrandt, Canaletto, Canova, Ro- din, Monet, Pissarro, Renoir, Cézanne, van Gogh, Gauguin, Picasso and Matisse. The building itself is a work of art.

St. Petersburg has, through the communist era and the recent turbulent times, maintained a thriving tradition for ballet and opera. There are options for both public and private performances. The theatres in the Hermitage or Yussapov Palace are gems, perfect for private S EA D REAM performances. For public performances, the Mariinsky theatre is impressive. It opened in 1860 and became the pre- eminent music theatre of late 19th century Russia, where many of the stage masterpieces of Tchaikovsky, Mussorgsky and Rimsky-Korsakov received their premieres. The Mariinsky Theatre is home to the Mariinsky Ballet, Mariinsky Opera and Mariinsky Orchestra.

St. Petersburg is Russia’s most cosmopolitan city and therefore nightlife afi- cionados wont be dissapointed. “Confluence Cuisine”

A question I’ve been regularly asked by our guests over the years is “what kind of cuisine do we serve onboard?”

I’m sure many SeaDreamers have tried cuisine from all over the world. On S EA D REAM I & II we have created our own cuisine style which we call “Confluence Cuisine”. On your past voyages you may have noticed the numerous nationalities working in cohesion onboard. In fact, there are chefs from 11 different countries working in the kitchen together, making each meal memorable. At S EA D REAM a variety of world cuisines are combined, blended together but without destroying their integrity. You may have enjoyed dishes from three different parts of the world on the same plate… this is Confluence Cuisine.

While selecting the dishes for the menus, we keep in mind the 112 dif- ferent taste palates of our guests and the countries from which they come. Our chefs do not cook just for the sake of making food, but rather we strive to give each palette 100% satisfaction.

I hope we always achieve our goal and succeed in giving you a delicious and memorable culinary experience aboard S EA D REAM .

Sudesh joined S EA D REAM in 2001. By now, he certainly understands what makes a SeaDreamers’ mouth water. Aside from the ever popular and delicious lobster and lamb entrees, Sudesh always infuses his Indian heritage in the menu. In fact, it’s now become a given for guests to get their Indian cuisine fix by the master himself. Some say a voyage with Sudesh just wouldn’t be complete otherwise. Growing up in Patna, India, Sudesh helped his mother with the cooking. Later, at the Hotel Taj Mahal Intercontinental in Bombay, he learned the basics of haute cuisine. He says “I felt that as an Indian I could bring the fabulous spices and techniques of Asia to my cooking, but I didn’t want to be typecast as an Indian chef. I wanted to present many of the world’s cuisines in their own classic manner. But at the same time, I was fascinated by cross cultural nuances in cooking.” He looks for the best quality products and produce to present guests with an eclectic menu from all over the world. Surprisingly, if given a choice to dine anywhere in the world, he says “my parent’s house would be my choice”. Perhaps it’s true what they say “there’s no place like home and a home cooked meal”.
